BURRO PLANTAIN

Plátano Burro, or Burro Plantain, is a short, square-shaped variety of plantain with a slightly lemony flavor when ripe. Unlike the more common elongated varieties, it has a firmer texture and can be eaten at different ripening stages—green for frying and boiling, or yellow/black for sweeter dishes like baking or desserts. Burro plantains are nutrient-dense, providing fiber, potassium, and vitamins A and C. Their starchy makeup makes them an excellent substitute for potatoes or grains in many dishes.
