JAMAICAN CALALOO
Callaloo refers to both a leafy green vegetable and the beloved Caribbean dish made from these greens. Depending on the region, Callaloo greens may come from several plant species, such as amaranth, taro leaves, or Xanthosoma. The leaves are dark green and tender when cooked, with a slightly earthy, spinach-like flavor.
Highly nutritious, Callaloo is rich in iron, calcium, fiber, and vitamins A and C. It is often used in soups, sautés, or as a side dish, commonly cooked with garlic, onions, coconut milk, and spices. Callaloo holds cultural significance in many Caribbean countries, where it is considered a staple of local cuisine.
